Oven Baked Turkey Enchiladas

Need a quick weeknight dinner? Left over deli sliced turkey or even better ... leftover Thanksgiving turkey? Great quick meal with tons of flavor.



1 3/4 pound deli breast of turkey, cubed (or leftovers would be superb)
4 oz can diced green chiles, fire roasted
2 cloves garlic, minced
1/2 cup sliced green onions
1/2 cup lite sour cream
1/2 cup 2% cottage cheese
1 teaspoon chili powder
1 15oz can enchilada sauce
1 cup shredded sharp cheddar cheese
1 cup sliced grape tomatoes
10 Flour tortillas

Directions:

Combine turkey, chiles, garlic, 1/4 cup green onions, 1/2 cup shredded cheese, sour cream and seasonings; mix well.

Spread ¼ cup turkey mixture on each tortilla; roll up tight.

Pour ½ cup enchilada sauce on bottom of 13" x 9" baking dish.

Place tortillas in baking dish, seam side down; top with remaining enchilada sauce, sliced tomatoes, 1/4 cup green onions and 1/2 cup shredded cheese.

Bake oven at 350° F for 20-25 minutes or until thoroughly heated.
